Cloud ear mushrooms are small, dark fungi with a crunchy, slightly jelly-like texture. They have a mild taste and absorb the flavours of the sauce. Soak them in warm water before use, then add them to hot and sour soup, stir-fries, dumpling fillings and salads. The 30g pack expands a lot once soaked.
