Stockan’s oatcakes are baked on Orkney, off the north coast of Scotland. This version is made with beremeal, an old type of barley grown on the islands, which gives the oatcakes an earthy, nutty taste. The triangle shape is handy for cheese boards and canapes. Serve them with cheese, pate or smoked salmon.
